The name
Annam — the peaceful south
Annam is a historic name for a region of Southeast Asia spanning most of central Vietnam, between Cochinchina to the south and Tonkin to the north. Its most important city and historic capital is Huế, with Đà Nẵng and Vinh nearby.
The name comes from the old Chinese 安南 (ānnán), meaning the "pacified south" — a fitting spirit for our table.
